Remove all mentions of Matterhorn from the codebase

Steps to reproduce

As part of our switch to Apereo, and to minimize confusion, we should remove all traces of Matterhorn from our codebase in favour of Opencast. This parent ticket will contain all of the relevant tasks.

Hi everyone,
I've just applies Greg's patch:

MH-12367: Renaming all modules, removing matterhorn- from their name

as expected, this caused a lot of merge conflicts for nearly all pull
requests (at least those against `develop`).

When fixing these issues, you might want to use that moment to create a
pull request against Opencast's new home on Github. There are still a
few minor things to do but it's mostly ready:

We're getting close to the deadline, so I'd like to drop a reminder here
