Writing ffmpeg output to /dev/null results in an encoding error

Steps to reproduce:
1. Create an encoding profile that writes the encoding output to /dev/null, for example when implementing two-pass encodings
2. Matterhorn complains that the output file does not exist: "Unable to put the encoded file into the workspace"
