New ffmpeg image encodings do not work: PICT_TYPE_I unknown for many ffmpeg versions

Steps to reproduce:
1. Unfortunately we have not found any machine really running the "official" ffmpeg version that comes with matterhorn. But we have tested it in official Fedora and Ubuntu Versions of ffmpeg (0.7.x to 1.1.x) and the CentOS/RHEL ffmpeg versions that we provide in the repo.
2. If you process a video you get the error below in the code snipped when processing the image operation. It fails because PICT_TYPE_I is unknown. We have not found this option documented in the ffmpeg docs, but we had noticed that it was provided in one of the examples.
3. If we replace PICT_TYPE_I by I it works on any ffmpeg version that we could test again.
